Homemade Bakewell tart, but make it vegan and cover every but of pastry in jam! The crisp buttery shortcrust pastry and light and fragrant frangipane work so well together. I used raspberry jam but you can customise this to what you have to hand, strawberry, cherry and blackberry would all be lovely too!
